Azienda Agricola Polla Mauro Maso Pan

The Maso Pan farm produces organic cheeses made right here in the valley, processed in the barn and matured naturally. We choose this farm for the quality of its milk, its respect for animals and the flavour it maintains in the kitchen and on our pizzas. These are ingredients that remind us where we are.

Brenta Salumi

Brenta Salumi provides us with cured meats processed the old-fashioned way: few ingredients, slow seasoning and quality meats. Sausage, bacon, guanciale (pork jowl), salami and carne salada (salt-cured meat) appear on our plates and pizzas with nothing to hide. These are genuine flavours you recognise at the first bite.

Birrificio Val Rendena

The beers we serve are made at a brewery a few kilometres from here, the Birrificio Val Rendena. We choose them for their meticulous production, their mountain water and their natural pairing with our dishes and pizzas. These are craft beers that say more about Trentino than words ever could.

We’ve always worked with Bevande Rendena for our soft drinks, wines and products which we select together. They understand our needs and help us offer local and national labels always enhancing our menu and never at odds with it. This is a relationship of trust built over time.

Agriturismo Dalla Natura la Salute

The honey we use comes from the Dalla Natura la Salute farm. It’s harvested in the valley, its flavour changing with the seasons. We use it in several dishes, desserts and special pizzas. We like it because it’s a true reflection of the local area.

Fattoria Antica Rendena

The Fattoria Antica Rendena farm provides us with the organic yoghurt we use in our desserts and some of our dishes. The milk, from locally-reared cows, has an authentic taste with no added flavourings. It’s a simple ingredient, but it makes all the difference.
